Khachapuri: Georgia's Iconic Cheese Bread

If Georgia had a national edible flag, it would be khachapuri. This warm, cheese-filled bread comes in dozens of regional forms, each with its own character and fierce local pride.

The most theatrical is Adjaruli khachapuri — shaped like a boat, filled with bubbling cheese, and crowned with a runny egg and a pat of butter you stir in right at the table. Imeruli, the round, sealed version, is the everyday favorite. However it is served, that first bite of stretchy, salty cheese and soft crust is unforgettable.
